From Personal Healing to a Plant-Based Movement

The Coop Sullivans was born out of necessity, resilience, and a deep desire to reclaim health through food. In 2012, while still a university student, I founded this platform during one of the most difficult times in my life. Just a year earlier, I had been diagnosed with Postural Tachycardia Syndrome, a complex disorder that disrupted my autonomic nervous system and left me struggling with extreme fatigue, digestive complications, recurring infections, and a rapid, unstable heart rate.

Despite being prescribed multiple medications, the results were minimal. After months of hospital visits and physical decline, I hit rock bottom both mentally and physically. But it was in that low point that I began to search for a new way forward.


A Journey Fueled by Food and Purpose

Inspired by stories of others who had transformed their health through lifestyle and diet, I made the decision to adopt a plant-based way of living. The problem was, I had never cooked, knew nothing about plant-based nutrition, and had lost all motivation and direction.

To overcome these challenges, I started a blog—what would eventually become The Coop Sullivans. My goal was simple: document my journey in the kitchen as I learned to cook, explore new ingredients, and rediscover creativity. I wanted to prove to myself, and eventually others, that healthy eating could still be abundant, exciting, and full of flavor.

What began as a private journal quickly turned into something far greater. As I shared my story and recipes, readers started to connect. The blog gained momentum, reaching millions of people around the world, with over 130 million visits to date.


Building a Community and a Brand

With the growing success of the blog came new opportunities. I began teaching cooking classes, hosting plant-based dinner clubs, and expanding the conversation on social media. That is also when I met my husband Matt, who is now our CEO and my partner in both life and business.

Matt brought a background in finance and business development, and together we envisioned a larger mission: to make delicious, nourishing plant-based food more accessible to everyone. Combining our strengths—my passion for content, recipes, and community, and his expertise in operations and strategy—we opened our first deli in central London. The response was overwhelming. Lines stretched around the block, confirming that the demand for real, flavorful, plant-based food was growing.

We soon opened a second, larger location and launched a food business designed to bring our meals to even more people. Today, The Coop Sullivans is more than a brand. It is a movement built on the belief that food can change lives.
